Description

Oatmeal Raisin Cookie Bars are thick, soft, chewy, and cinnamon-spiced, packed with oats and juicy raisins, and finished with a creamy cream cheese frosting.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 large eggs, room temp
  • 2 teaspoons vanilla extract
  • 2 cups quick oats
  • 1 cup raisins
  • 1/4 cup unsalted butter, softened (for frosting)
  • 4 oz cream cheese, softened
  • 1 1/2 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350 F, spray a 9×9 pan with baking spray, line with parchment paper, and set aside.
  2. In a small bowl, combine flour, baking soda, cinnamon, and salt; set aside.
  3. In another bowl, beat the butter and brown sugar until light, fluffy, and smooth, about 2 to 3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Scrape the bottom and sides of the bowl as needed.
  5. Add in vanilla.
  6. Gradually fold in the flour mixture until almost combined.
  7. Fold in the oats and raisins.
  8. Press the dough evenly into the prepared pan.
  9. Bake for 18 to 20 minutes or until the edges start to look golden.
  10. Let the bars cool in the pan for 5 to 10 minutes before transferring to a wire rack to cool completely.
  11. To make the frosting, beat unsalted butter and cream cheese until light and creamy.
  12. Add vanilla extract and powdered sugar and beat until smooth.
  13. Spread frosting over the bars. Cut bars into squares. Serve and enjoy.
