Delicious muffins combining the creamy richness of cheesecake with the nutty sweetness of honey and pecans.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup chopped pecans
  • 1/4 cup honey
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, oil, and egg. Stir into dry ingredients until just combined. Fold in pecans and honey.
  4. In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin cup halfway with batter. Add a spoonful of cheesecake mixture, then top with remaining batter.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool before serving.

Notes

Store in an airtight container for up to 3 days. Can be frozen for longer storage.
