Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup chopped pecans
- 1/4 cup honey
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, oil, and egg. Stir into dry ingredients until just combined. Fold in pecans and honey.
- In a separate bowl, beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Fill each muffin cup halfway with batter. Add a spoonful of cheesecake mixture, then top with remaining batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool before serving.
Notes
Store in an airtight container for up to 3 days. Can be frozen for longer storage.
