Ingredients
1 lb lean ground beef
1 cup onion, diced
2 cloves garlic, minced
1½ cups white or brown rice, cooked
1 cup shredded cheddar cheese, divided
Salt and pepper to taste
Optional: 1 cup mixed veggies (peas, carrots, spinach)
Instructions
1. Preheat oven to 375°F
2. Brown ground beef with onion and garlic; drain fat
3. Season meat and press into pie dish
4. Cook rice; stir in half the cheese and veggies
5. Spread rice mixture over meat; top with remaining cheese
6. Bake 25–30 minutes until bubbly and golden
7. Let rest 5–10 minutes before slicing
