Fresh arugula sauerkraut salad with berries and goat cheese

Arugula Sauerkraut Salad

Ingredients

Scale
  • 6 cups arugula

  • 3 small cucumbers, sliced

  • ½ cup blackberries

  • ½ cup blueberries

  • ½ cup sauerkraut, drained

  • ¼ cup roasted pistachios

  • ¼ cup crumbled goat cheese

    Dressing:

    • 2 tbsp olive oil

    • 1 tbsp honey

    • 1 tbsp Dijon mustard

    • 2 tbsp lemon juice

    • Salt and pepper to taste


Instructions

  • Wash and prep ingredients.

  • Toss all salad ingredients in a large bowl.

  • Whisk dressing ingredients separately.

 

  • Drizzle over salad and serve immediately.
